As the summer is coming to an end and the temperatures are dropping and the garden is in full growth, it is time for some warm and healthy soup. It warms you from inside and fills your body with vitamins and minerals.

August was one very hard month for me. Besides work and spending as much time as possible with my family and my grandad, I didn’t have time for anything else. I tried very hard to stay positive, but watching a person you love so much slipping away is exhausting and just simply sad.

The comfort food we ate most this month was a strong vegetable soup. My garden was and still is full of great veggies and I need to harvest them daily. I don’t like storing for the winter so the best thing was to give them to my family. So we cooked soup. Like this one below and all other variations. Just use what you have at home and enjoy this beautiful days.

5 color soup

For 4 people:

1 onion, chopped

2 small / 1 large leek

2 small /1 large zucchini

4 small /2 large carrots

1 kohlrabi

1 tomato

1 potato

1 cup green beans

1 garlic clove

parsley

1 tbs olive oil

1 tbs salt

pepper

Method:

Cut all vegetables in to small equal pieces. Saute the onions on olive oil and add finely chopped garlic. After it starts to smell nice, add all the veggies and salt and pepper. Cook for 5 minutes and stir occasionally. Now add about a one liter of water (or more if you like) and chopped parsley. Cook on a medium heat for about half an hour or until the veggies are soft. Taste and add more salt and pepper if you like.

Avgust je bil zame zelo težek mesec. Poleg dela in preživljanja čim več časa z mojo družino in dedkom, nisem imela časa za karkoli drugega. Poskušala sem ostati pozitivna, vendar gledati osebo, ki jo ljubiš, kako se počasi poslavlja, je naporno in preprosto žalostno.

Hrana, ki smo največkrat jedli v tem mesecu je bila močna zelenjavna juha. Moj vrt je bil in še vedno je poln zelenjave in ki jo moram pobirati vsak dan. Ne maram shranjevanja za zimo, tako je bila najboljša stvar, da jo delim z mojo družino. Tako smo kuhali juho. Kot je ta spodaj in vse druge variacije. Samo uporabite tisto, kar imate doma in uživajte v teh lepih dneh.

5 barvna juha

Za 4 osebe:

1 čebula, sesekljana

2 majhna / 1 velik por

2 majhni / 1 velika bučka

4 majhni / 2 velika korenja

1 kolerabica

1 paradižnik

1 krompir

1 skodelica stročjega fižola

1 strok česna

peteršilj

1 žlica oljčnega olja

1 žlica soli

poper

 

Postopek:

Razreži vso zelenjavo na majhne enake kose. Prepraži čebulo na oljčnem olju in dodaj drobno sesekljan česen. Ko začne lepo dišati, dodaj vso zelenjavo ter sol in poper. Kuhaj 5 minut in občasno premešaj. Zdaj dodaj približno liter vode (ali več, če ti je všeč) in sesekljan peteršilj. Kuhaj na srednji temperaturi približno pol ure ali dokler ni zelenjava mehka. Po okusu dodaj več sol in popra.
