Garam Masala is a staple in Indian cousine, but even if your not cooking Indian food, there is plenty of dishes you can use it in. I love adding it to rice dishes, grilled vegetables and sometimes even to tomato sauces, just to add a hinge of oriental flavours. It’s very easy to make, and if you don’t have all ingredients grounded, you can easily mix them as whole and ground in a mortar. Transfer to a small glass container, decorate nicely and it makes a lovely gift.
- 1 tbsp ground cumin
- 1½ tsp ground black pepper
- 1½ tsp ground coriander
- 1½ tsp ground cardamom
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- ½ tsp ground cloves
- Mix all spices together in a mortar. If you use any of them as whole spice, make sure to grind it thoroughly in the mortar.
- Transfer to a small glass container and store in cool and dry place.
