So, I am excited as you can see. The preparations are in full swing. The location scouting, deciding about the menu, browsing for the dress. And the photographer, band or DJ… So many things to plan! I will sure keep you updated. Though I don’t want to ruin all the surprises for the guests. So maybe I won’t tell you everything. But definitely about the food. The biggest problem is finding vegan food, that the caterer will be glad to serve. We won’t serve be only vegan food, because I would like my guests to have the best day of the year and food is one big issue.

Are you vegan and married? How did you handle the food options? Vegan only, meat only? And advice? :)

Now for the tomato sauce. Last year we made it for the first time. We had too much tomatoes in the garden, and it was a wise decision to make so much sauce. It lasted for about 5 months (not because it spoiled, but we love the taste and eat it every week). This year was a cold and very dry, so we had to buy the tomatoes. We made sure it is locally and ecologically produced.

This sauce is tasty, not hard to make but takes quite some time of cooking to really get the right taste. You can use it as a pizza spread, pasta sauce (like with this ravioli), with Bruschetta, and so much more. In a cold place, it will last for one year, if canned right.

Ingredients
  1. 5 kg tomatoes
  2. 5 onions
  3. 5 garlic cloves
  4. 8 tbs salt
  5. white pepper, grounded
  6. a bunch of fresh parsley
  7. a bunch of fresh basil
  8. 1 tsb sugar
  9. 3 tsb light soy sauce
  10. 5 tsb olive oil
Instructions
  1. Boil some water and place tomatoes in it (about 5 at the time). When the skin tears, put them out and peel them. Peel all the tomatoes, pulse them in the food processor. Pulse a few times for chunkier sauce, or process until smooth for a pureed sauce.
  2. Chop the onions, and in a larger pan saute them on olive oil. When the onion is soft, add minced garlic and cook for few minutes. Now add the tomato puree and cook in opened pan for few hours. I think 4 hours is minimum to get really nice taste, but it depends on how juicy the tomatoes were.
  3. After few hours, add the seasoning and taste it. There is no recipe here, just experiment to get it right. I would use about 8 tsp salt, 1 tsb sugar, 3tsb soy sauce, and lots of fresh herbs.
  4. Can it and leave to cool down slowly. Store in a cool room.

Sem čisto navdušena, kot lahko vidiš. Priprave so v polnem teku. Izbiranje lokacije, odločanje o meniju, iskanje obleke. Pa fotograf, band anli DJ… Toliko stvari! Te bom obveščala o vsem. Čeprav si ne želim pokvariti vseh presenečenj za goste. Tako, da bom kako stvar raje zamolčala. Sigurno pa povem vse o hrani. Največji problem imam z iskanjem veganske hrane, ki jo bodo z veseljem pripravili. Ne bova stregla le vegansko, ker si želim, da gostje uživajo in si ta dan zapomnijo kot najlepšega v letu in hrana je pomemben faktor.

Si mogoče vegan in poročen/a? Kako si uskladila želje? So stregli le vegansko, samo meso? Kakšen nasvet? :)

Pa gremo k receptu. Lansko leto sva omako naredila prvič. Imela sva preveč paradižnika na vrtu in sva se super odločila, da narediva omako. Imela sva jo za 5 mesecev (pa ne ker se je pokvarila, ampak ker je okus res nor in sva jo jedla vsak teden). To leto pa je bilo mrzlo in sušno, zato sva morala paradižnike kupiti. Poskrbela sva, da sva kupovala lokalno in ekološko.

Omaka je zelo okusna, enostavna za pripravo, vendar se kuha kar precej časa, da dobimo pravi okus. Uporabiš jo lahko na pici, kot omako za testenine (na primer raviole), z brusketo in še mnogo več. V hladnem prostoru o zdržala eno leto, če bo pravilno vložena.

Ingredients
  1. 5 kg paradižnika
  2. 5 čebul
  3. 5 strokov česna
  4. 8 žlic soli
  5. mleti beli poper
  6. šop svežega petršilja
  7. šop sveže bazilike
  8. 1 žlica sladkorja
  9. 3 žlice sojine omake
  10. 5 žlic olivnega olja
Instructions
  1. V loncu zavremo vodo in vanjo položimo paradižnike (približno 5 na enkrat). Ko jim poči lupina, jih vzamemo ven in olupimo. Ponovimo z vsemi paradižniki in jih spasiramo. Za omako s koščki, jih spasiramo na hitro, za gladko omako pa temeljito.
  2. Narežemo čebulo in jo popražimo na olivnem olju v večji ponvi. Ko se zmehča, dodamo sesekljan česen in kuhamo še par minut. Nato dodamo paradižnikovo mezgo in kuhamo nekaj ur v odprti posodi. Za dober okus, jo kuhamo najmanj 4 ure. Seveda pa je odvisno tudi od sočnosti paradižnikov.
  3. Po nekaj urah omako začinimo in sprobamo. Tu ni recepta, delamo po svojem okusu. Sama dodam približno 8 žlic soli, 1 žlico sladkorja, 3 žlice sojine omake in veliko svežih začimb.
  4. Vložimo in počasi ohladimo. Shranimo v hladnem prostoru.
Notes
  1. Po receptu dobimo 3 l omake oziroma 12 lončkov po 250 ml.
  2. Podatki o hranilni vrednosti se pri slovenski verziji recepta ne izpišejo pravilno. Prave najdeš v angleški veziji zgoraj.

    Congratulations on the wedding! It’s definitely a great time and enjoy every minute of the planning and ceremony! This tomato sauce looks amazing and I’m sure it has tons of flavor!

      Thank you! I hope I will be able to plan the wedding just as I want to, but hope to really relax that day and forget about things that went wrong, and just enjoy :)
